"Cream" of vegetable soup without starches or cream

For one serving, put about a cup of broth into a pot with a big handful of any vegetable (I used chard today) and a quarter cup of lentils. Cover and cook until the lentils are done. Put into blender and blend at high speed for about a minute. Wish I'd discovered this trick a year ago when it would have been more useful, still it's an easy way to make a cream soup that actually tastes creamy without adding starches or cream.

That is a great idea and a tip for you - provided the broth/veggies aren't screaming hot, you can throw in 1/4 cup of fat free cottage cheese and give that a whirl in the blender.

 

That adds just 40 calories (depending on which you use) and around 7g of protein.

cooked cauliflower pureed will thicken almost any soup without ruining the flavor.
