Asian Seasame Shrimp and Vegetables

1 lb medium shrimp (I use the pre cleaned and deveined frozen kind)

1 head broccoli ( i cut it up and use only the florets)

1 head cauliflower (the same)

3 medium carrots, sliced

1/3 cup honey (I found sugar free artificial honey that is actually good for cooking)

1/3 cup soy sauce (lower sodium kind)

1/3 cup thinly sliced green onions

2 tsp toasted sesame seeds

1 tsp minced garlic

1 tsp minced dried onions

3/4 tsp ground ginger

1/2 tsp crushed red pepper (optional)

Preheat oven to 400. In large casserole dish combine the shrimp and vegetables. In seperate bowl, mix honey and soy sauce until well combined. Add in spices and sesame seeds. Mix well. Toss honey soy mixture with shrimp and veggies until all is coated. Cover casserole dish with tin foil and bake for 35-40 min until veggies are tender.

I eat it as is, but I make rice for my husband.

Sounds yummy... however, I don't eat any sort of seafood. I think I'm going to make this tonight for supper though- with Chicken, cut into small cubes!

I too have used the SF honey to good success! And we just bought some chinese peapods.. I think I'll add them! Can't wait- thanks!

That does look good and I'll eat the shrimp that Kel doesn't want~ :P

I LOVE seafood - which is just as well as I haven't been able to handle meat since WLS.

Me thinks a few peanuts wouldn't go amiss in that recipe too. Thank you!

Oh- too right on the nuts. I don't have any peanuts.. but I have walnuts, pecans, sunflower seeds and flax seeds.. Which, if any, would you think would match well?

I'm leaning towards sunflower?

Toasted walnuts would be my preference but I ultimately, in a stir-fry - roasted/unsalted cashews are THE best - toasted sesame seeds second.

Heck - never met a nut or a seed I didn't like to be honest.

Hmmm, nuts might be a good addition, didn't think of it. I'll have to try that next time.
