Chicken with caramelized onions, mushrooms and artichokes

After posting yesterday that I was not feeling like cooking, I got inspired and made this:

Olive oil
1 medium onion, halved and sliced thin
1 carton sliced baby portabello mushrooms
1/2 cup white wine or chicken broth
Salt and pepper
1/2 lb cooked chicken, shredded (I used some leftover store-bought roasted chicken)
One box frozen artichoke hearts

  1. Heat olive oil in a pan until hot.  
  2. Add onions and cook until starting to caramelize.  
  3. Add mushrooms and cook until mushrooms release their juices.  
  4. Add artichoke hearts, wine or broth and cook down the liquid.
  5. When the artichokes are defrosted, add chicken to the vegetables to warm through.

This sounds very good! If you're looking for a side dish to this, some baked spaghetti squash sounds divine or some zoodles (zucchini noodles made with a spiralizer)! I like your recipes @garnet dreams!

Thanks, @BelleCurves!  I had initially planned on serving this over zoodles but with the mushrooms and artichokes it was already too much food.  I'll do something with them another day.
