Casseroles

Does anyone have a favorite casserole dish? I've come up with one or two I want to try when I am further out but I find a lot of them have pasta/carbs of some kind.  

 

Really enjoy Tuna casserole.

I've done broccoli, cheese, and chicken for hubby.  I've also added quinoa to it.  

I dont like casseroles (I'm not fond of food mixed together;).  So I normally take my meat and veg out before making a casserole.  Hubby loves casseroles and takes leftovers for lunch the next day..

I enjoyed making a skinny version of Chicken Divan, which is basically chicken, broccoli, cheese, mayo and spices. Usually served with rice, but its good on its own or use cauli rice. With greek yogurt and dividing it into 8 servings the stats are: 242 calories, 15 g protein, 20 net carbs, 11 g fat. 

CHICKEN DIVAN 

3 Boneless skinless chicken breasts

2 10oz packs frozen broccoli

1 c panko bread crumbs

1-2 tbl butter or margarine

paprika

Sauce:

1 can cream of chicken soup 

2/3 c mayo (sub lite mayo OR plain greek yogurt)

1/3 c canned milk

2 tbl lemon juice

1 tsp curry powder

3/4 c grated cheddar cheese

 

Preheat to 350 F

Boil chicken, dice into cubes

Line baking dish with frozen broccoli

Layer chicken over broccoli

Mix all sauce ingredients, pour over chicken and broccoli

Melt butter and mix with bread crumbs, sprinkle over top

Sprinkle paprika over everything

Bake 25-30 minutes

Also zucchini lasagna has been pretty popular in my house. There are several recipes on Pinterest.
