Variety in quesadillas

I've made quesadillas with chicken, beef, and pork. Today's lunch was a crabmeat quesadilla with crab from Maine.

They all sound delicious right about now, except for the Crab (allergic). how do you make your quesadillas if you don't mind me asking

I like white flour tortillas, shredded cheese, chopped red onion, bell pepper, and jalapeños. I use an ancient cast iron griddle and usually spray it with canola oil. If you have a Whole Foods near you, they make them to order. It's very easy.

sounds easy enough think I will have to try them, well once allowed real food again.

There are a variety called flat out that have lower calories and protein.  Not bad..
