Vegetable portion sizes problem solved

I've been buying chicken quesadillas from WF for about a year, and one is good for 3 or 4 meals. I typically eat them cold. A few weeks ago, I decided to start making my own. When I went to the supermarket to buy vegetables, the smallest bell pepper and onion I could find were the size of softballs, a month long supply for my purposes. Cue the salad bar that has cut up vegetables and cut up chicken breast, ready to go. $2 buys enough to make 3 quesadillas.

You could always make a bunch of quesadillas and freeze them?
