Des,
Pre-op, I was a big fan of no bake cookies and anything else that seemed like batter/dough. Just thinking about it makes my mouth water even though I really couldn't care less about eating right now.

Anyway, here's the recipe that I have for no-bakes...

2 tablespoons - Nestle Quik
2 cups - sugar
1/2 cup - milk
1 stick - butter
1/2 cup - peanut butter
1 teaspoon - vanilla
3 cups - quick oats

In a medium saucepan, melt the butter. Then add the Quik, sugar, and milk. Bring mixture to a boil. Remove from heat and stir in peanut butter until well blended. Then add vanilla and, finally, stir in oats. Drop cookie sized amounts onto waxed paper. Cool and then refrigerate.

Hope he likes them!

Hmm, I wonder if this could be changed to a WLS-friendly recipe? I LOVE no-bake cookies and these sound like exactly what I used to buy at the grocery store. If I substituted sugar free chocolate for the Nestles Quick (I have SF Hershey's Syrup, wonder if that would still be 2 tbsp or if it would be less?) and Splenda for the sugar. Anything else in there that would need to be substituted for, maybe the butter? Although I have eaten real butter, but anyway. These sound delicious!

My husband also loves no-bake cookies. The recipe I use calls for real Cocoa, which is sugar free, but I haven't tried to replace the sugar w/ splenda. My pouch is so pissy lately I think I'll just make them for him this year

No Bake Cookies

1 stick margarine
1/2 cup milk
2 cups sugar
1/2 cup cocoa
3 cups quick-cooking rolled oats
1/2 cup creamy peanut butter
1 teaspoon vanilla

Combine in a medium sauce pan the first 4 ingredients. Boil mixture on medium -high for 1 minute. Stir in the other 3 ingredients, mix well. Drop by spoonfuls onto wax paper and let sit until firm.

Off Topic.. or at least off recipe. lol But for those ladies considering baking with sugar substitute... I don't know if it's available in your area, but Clabbergirl just came out with a sugar free substitute designed specifically for baking, and in my opinion, it bakes and tastes more like real sugar than Splenda does. Just FYI.
