Default Mom's Out There...Help!

My baby is going in for double eye surgery next week (I am very scared...even though it is a routine surgery). Anyway, I want to make him some YUMMY different foods that he has never had. Do any of you have any yummy recipes that your kiddies just LOVE? I was looking on allrecipes.com for different ideas, but I thought I would ask my buddies!!

Cindy, first let me say that I have had countless eye surgeries, and recent double cataract surgeries (2 years ago). It is the least stress of all surgeries, but I will start those good vibes in the universe for him. A boy, right?

Second, what yummy type things does he like? How old?

Yes...a boy. The one thing that scares me is my friends son had this same surgery and she said there were "bloody tears"...I don't know if I can handle bloody tears. ...reg. tears tear my heart out.

He is 6....he is easy to please, but doesn't like "melted" cheese...he loves mac and cheese...just not melted cheese...strange child (can't be mine). Hmmm, I have never made "real" mac and cheese...any yummy recipes for that?

What a cutie pie...I'll send him some good vibes for his surgery. Most of my recipes have melted cheese on them but I will look around and see what I can find.

Thanks Andrea & Michelle!! I think he is pretty darn cute myself!!

What the heck...where are all the recipes for yummy fattening food for my baby....we didn't all become MO by osmossis.

Default Baked Macaroni & Cheese

I made this often for my kids when they were little (they are 33 & 36 now!)



1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup bread crumbs

Preheat oven to 350 degrees F.


In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
