Strawberry Shortcake
Oy! Wal-Mart has put out sugar-free dessert cups, so I put this together. I only ate a few bites, but it was pretty good. My husband loved it.
8 ounces of strawberries
6 sugar-free dessert cups (they're in the bakery section)
Fat-free whipping cream (you can find it if you look hard enough--and I'm not talking about Cool Whip, who have yet to put out a sugar-free product, as near as I can tell. You'll find this in the dairy section)
Splenda, either packets or measurable
About two hours before you plan to serve it, take the big hairy green bits off the strawberries, and slice them up into a large bowl. Sprinkle four to six tablespoons of the measurable Splenda onto them (or eight to ten packets of Splenda) and add about a half cup of water. Stir well, cover, and stick the bowl in the fridge. Stir them every half hour or so, or just when you think about it.
Just before you're ready to serve, whip the fat-free whipping cream according to the directions, and add Splenda to taste as you whip it.
Get out six dessert bowls or plates. Put a dessert cup on each. Using half the strawberries, put some fruit and juice on each dessert cup. Then whipped cream on each, then a layer of strawberries again, then a dollop of whipped cream.
Nutritional Value - not very much... but lord, it tastes good!

Lisa trust me that was my craving 2 weeks ago and mmmm  mmmm good. It fills you up fast. Thanks for sharing Lisa. I didn't know I was suppose to add water to the strawberries.

Lisa, we've been eating strawberries like crazy in our household. Everyone loves them! This sounds like an excellent surprise treat for my hubby and kids. Thank you for sharing this.

Here's the deal on the water - when you add sugar to strawberries, it draws the juices out of them, which is how you get that wonderful syrup. In my mother's traditional recipe for shortcake, you just add sugar the day before to sliced strawberries, and you don't have to add water.
Splenda, unfortunately, does not have the same effect. If you want to get the syrupy feel to the strawberry topping without the sugar, you can either add water and stir a lot, or you can puree a few of the hulled strawberries with some Splenda and add to the mixture.

FYI, Cool Whip does make a Sugar Free product, it just came out a few months ago. I use it on my Stallone Pudding to make a Stallone parfait. Its quite tastey. Thanks for the recip, it looks good.
