Black Bean and Pepper Salad
I have this recipe from a dinner party I went to years ago. I don't know the nutritional breakdown but it should be FULL of protein. Great for the vegitarians among us too. It is DELICIOUS! I'm making it for a graduation party I'm going to on saturday.
BLACK BEAN AND PEPPER SALAD
Directions: Combine 1st 7 ingredients. Whisk, toss and refrigerate at least 2 hours.
Add other ingredients when ready. (Best if made earlier for better taste)
No cooking involved. (MY KIND OF RECIPE! lol)
1/4 cup salad oil
1/4 cup Red wine vinegar
2 tablespoons chopped parsley
1 tablespoon chili powder
1 teaspoon finely minced garlic
1/2 teaspoon salt
1/4 teaspoon pepper
3 15 oz cans of black beans (Rinse and drain)
1 cup chopped celery
1/2 cup red pepper
1/2 cup yellow pepper
1/2 cup green pepper
1/2 cup green onions
May also add 1 pkg of frozen shoepeg white corn (no sauce).
Enjoy. I hope you like it.

Well I made it last night, threw it all together and tried it tonight. (well, this morning. lol) It's delicious! It should be even better for the party at 2pm today. THe longer it sits, the better the taste. I did forget the corn though, and used taco seasoning instead of chili powder. I forgot the recipe when I went shopping. lol I am going to have to make this often. yum!

We always have a family BBQ on the 4th. I think I just may bring this for the BBQ. I need to make sure there will be something there I can eat! Thanks again for sharing this.

Hey Duckie....this sounds pretty good. Let me know if you think the taco seasoning was better or worse than the chili powder. How do you think cilantro would taste in it......cause I love that stuff.

lol Marty. I last had this YEARS ago so I don't know which tasted better. I just know this tasted great! I bet cilantro would be awesome. I love that stuff too.
