Default Roasted Red Pepper, Baby Spinach and Goat Cheese Sandwiches

I can only do one piece of bread but I thought this sounded good. You could probably do this open-faced.


Roasted Red Pepper, Baby Spinach & Goat Cheese Sandwiches
from Campbell's Kitchen

Prep Time: 10 min.

Ingredients:

2 cups baby spinach leaves
3 tbsp. fat-free raspberry vinaigrette OR your favorite fat-free vinaigrette
4 slices Pepperidge FarmŽ German Dark Wheat Natural Whole Grain Bread
2 roasted red peppers, cut into strips
1 oz. goat cheese OR blue cheese, crumbled
2 tbsp. thinly-sliced green onions


Directions:
TOSS spinach and vinaigrette in bowl. Arrange spinach mixture on 2 slices bread.
TOP with red peppers, cheese, green onions and remaining bread. Serves 2.

I like to sub a half of a whole-grain pita for any bread. Add some sliced grilled chicken for protein and this is a big winner! Yum!

Jen, last time I tried the whole-grain pita bread it didn't go too well but that's been awhile. I may just have to try it again and adding chicken is a great idea.
