Shrimp cocktail, veggies and dip ( I had the cream cheese and chili thing last night at my poker party) Watever you want-as long as you are at leat 3 months out... skies the limit!

I still have a tough time with some of the raw veggies. You really have to chew!

Cheese Ball
2 packages lite cream cheese
2 cupes shredded mild cheddar
2 cups of chopped pecans
1 can crushed pineapple (drained VERY well)
1 tablespoon minced onion
1 tablespoon minced green pepper (you can also use 1 tablespoon of red bell pepper too looks nice at x-mas)
2 tablespoons of seasoning salt (the Kroger store brand works best)

Set cream cheese out to soften. Combine cream cheese, cheddar, 1 cup of pecans, pineapple, onion, pepper(s), and seasoning salt in a large bowl. The best way to do it is just mash it with your hands. Once everything is conbined well, form into a ball. Pour 1 cup of pecans on a plate and roll the mixture until covered well. Wrap with plastic wrap and refrigerate at least 2 hours. I prefer to leave it over night, the flavors seems to blend better. Serve with Ritz, triscuits, etc.
