Sugar Free Banana Cream Pie
Makes 10 servings Calories 137 Fat 10gr Carbs 11gr Protein 1
This is so simple to prepare. I can throw one of these together in no time for an after supper treat and even though it is made from ordinary pantry ingredients, it will always put a big smile on my husbands face. This is usually what I make for a birthday to replace the traditional sugared cake. For a change, it is nice to make individual pies in small 3/4 cup custard cups or ramekins; it is cool to have your own little pie!
To really kick up the banana flavor... whisk 1/2 cup of ProPlete Gold Banana Creme protein powder into the semi cooled pudding before pouring it into the crust! The real banana flavor of this protein mix allows you to skip the high carb banana slices in the pie altogether if you want to pare down the carbs!
2/3 package of Murray Sugar Free Pecan Shortbread cookies
1 tablespoon butter, melted
1 small package of Jell-o sugar free vanilla pudding, cooked variety
2 cups skim milk
2 teaspoons pure vanilla or coconut extract
1 large ripe banana
Reddi Wip, whipped light cream or 1 cup of Splenda
Sweetened whipped cream
Preheat oven to 350°. Pulse the cookies in a food processor until they are a fine crumb. Blend the crumbs with the melted butter until moist and evenly mixed. Press into a 9 inch glass pie plate and bake for 10 minutes or until crust begins to color. Remove to a rack and cool while preparing the filling.
Cook the Jell-o Sugar Free Vanilla Pudding mix according to the package directions. Remove from the heat, stir in the coconut or vanilla extract and set aside. Peel the banana, cut into thin slices and arrange evenly over the crust. Pour the slightly cooled filling over the banana pieces and chill 2-4 hours until set. To serve, cut into wedges and swirl on the Reddi Whip or whipped cream.
