To die for shrimp salad spread
WLS 1/2 C portion: Calories 115, fat 7 gr, carbs <1 gr, protein 12 gr!
1/2 t. olive oil
1 pound medium shrimp, peeled and deveined
1/4 C light mayonnaise (I used best foods light)
Juice of 1/2 lemon, about 1 T
2 green onions (scallions, sliced, including the green tops)
1 t. Old Bay Seasoning
Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shrimp and saute for 2 to 3 minutes, stirring constantly, until just opaque throughout. Transfer to a small bowl and set aside. Blend the mayonnaise, lemon juice, green onions, and Old Bay Seasoning in a food processor until smooth; add the shrimp and pulse until they are very finely chopped and the mixture is well blended. Transfer to a serving bowl, cover, and chill.
Since I'm in the soft foods stage of my recovery, I pulsed the heck out of everything. If you're further along, you can leave chunks of shrimp for a different texture.

I just wanted you to know that I made the Shrimp Spread for my family today. Now mind you, they are somewhat picky when it comes to "low-cal" foods. As soon as they found out it was made with shrimp and because they do support me, they were excited to taste it.
Drum roll please...they devoured the spread along with the Carr's crackers it was served on. I did leave some to taste myself and loved it.
It was very easy to make, and a great change and treat to have. To top it off, the shrimp was on sale at Albertson's.
Thank you for posting this delicious recipe!
P.S. I have the chicken enchilada casserole in the oven as we speak for dinner. I'll report on that soon. Thank you again!
