Hummus
This is a really good!
My counts were wrong last night - must have been too much water!
WLS 1/4 cup portion: Calories 65.5., fat 4 gr., carbs 6.4 gr., protein 2 gr.
Makes 2 cups
One 16 oz can chickpeas, rinsed and drained
3 garlic cloves, thinly sliced
1/3 cup tahini (sesame paste) don't buy the sauce, too much other stuff in it.
2 T. fresh lemon juice (about 1 lemon)
2 T. extra-virgin olive oil
Kosher salt and freshly ground black pepper
In a food processor or blender, puree the chickpeas with the garlic, tahini, lemon juice, olive oil, and as much water as necessary to process the hummus to a smooth mayonnaise consistency, scraping down the sides to incorporate all the chickpeas. Add salt and pepper to taste and trasfer to a bowl. Serve with your favorite cracker. This was taken from Susan Maria Leach's book, before and after WLS. You can also eat this during creamed soup stage, it breaks up the monotony.

The tahini paste was hard to find. I did finally find it at Stater Bros. in the ethnic food section. Please be careful not to get the sauce.
It's really easy to make too!
I used the blender not a food processor.

Thanks Kim for the heads up, I'll look around here and see what I can find, there IS a terrific Oriental Market over in Kearny Mesa, maybe John could pick some up for me on his way home from Mira Mesa, I GUESS he'd go that way, I'm not even sure.... LOL 
A blender works for me, I don't have a FP...

If you find yourself getting bored with plain hummas, try it with sun dried tomatoes, roasted red peppers, roasted garlic and eggplant, green olives with pimentos or even spinach and fresh parsley with herbs. Hummas will take nearly any strong flavored veggie as an additive and its fun to experiment with some of the things available in produce. I use it to dip those baby carrots, sugar peas, pea pods, broccoli flowers, or zuccinni sticks. Easier to digest than crackers and better for you.
If you arent all that fond of chick peas try some of the beans like navy beans or white beans.
