Default Chili and Rotel Tomatoes

I'm always searching for something simple that won't make me feel icky and preferably that will give me some protein! So many things make me feel icky in the tummy.

I'd read many people saying that they eat chili. I've never been a huge chili fan, but I like it ok. It seems my tastes have changed so much since surgery that I thought I'd give it a try even if the thought of it gave me the ickies!

My husband loves canned chili and there are always cans of Hormel and Wolf Chili with beans in the pantry. I looked at the labels and compared the two. Found Wolf to have more protein and less sugar (though it did have a little more fat, but not much. I chalked that up to beef being the first ingredient listed)

I glanced across the pantry and saw a can of Rotel tomatoes and thought that might be good... more tomatoes and I love the spice these add. So I mixed a can of them in with the can of chili. I added a few saltine crackers and it was just wonderful.

I ate on that one mixture for three days and never felt icky once. I was amazed how well it set with me and how I actually enjoyed the taste too. I know it is not gormet, but it worked for me.
