Thumbs up Pumpkin protein bars.......mmmmmmmmmmm

Ok I saw these on TV so I modified the recipe and it came out awesome!

4 eggs
1c splenda for baking
1c vegatable oil
1 can pumpkin
1 c flour
3 scoops unflavored protein powder
2 tsp baking powder
1 tsp salt
1 jar baby applesauce 4 OZ
2 tsp cinnamon
2tsp ginger
1 1/2 tsp ground cloves

Mix all wet ingredients with hand mixer slowly add dry ingredients mix well. Place into greased with Pam cake tray. Bake 45 minutes or until knife comes out clean on 350

FROSTING
1 PKG low fat cream cheese room temp
1/2 c non dairy whipped topping 9 check to make sure it has 1 or less grams of sugar)
2 tbs eggnog coffe creamer
1/3 c splenda for baking

Mix with hand mixer on high until smooth and creamy. Frost on cooled pumpkin bars.

I almost forgot! You can also ass nuts to this walnuts or pecans. I am going to try a date nut bars and maybe orange bars all with flavored cream cheese frostings. We usually order the flavored breads and cream chese from Swiss colony for Christmas morning but they are loaded with sugar and if I can make them healthy and no sugar my whole family will benifit!

Sounds YUMMY, Laura... I'm no cook though, so could you tell me, bake at WHAT degrees for 45 minutes? I am having a hard enough time adjusting to cooking/baking with an electric stove since moving to Oregon... I sure miss gas!

Ok I fixed it. 350 for 45 minutes. I made a second batch with 5 scoops protein and I had to lessen the baking time to 30 minutes, but it's now packed with protein!
