Default Salmon patties

Was experimenting last night and got a "this is good!" from my husband, so I guess it worked... The lemon juice is the key - you get the fish flavor without the fishy smell...

Salmon Patties

1 large pouch of pink salmon, boneless (7 or 8 oz).
1/2 cup of 1 or 2 percent milk
12 to 15 fat-free saltine crackers
1/2 a fresh lemon
2 eggs, beaten, or the equivalent in Egg-Beaters
small amount of olive oil

In a large bowl, shred the salmon with a fork until it will mix well. Crumble the crackers into the salmon, add the milk, egg, and the juice from the fresh lemon, and stir mixture until crackers completely dissolve. According to the brand of salmon, you may need to add a little more milk to the mix to make it wet enough.

Pour olive oil into frying pan until it just covers the bottom of the pan and heat at medium high. Drop one-eighth of mix into pan, shape into a patty about three inches wide. Brown on both sides.

Makes eight patties, each with about seven grams of protein.

This looks delicious! I might try it with crab too... as a variation! Thanks for taking the time to add this great recipe!

I love salmon patties, but haven't been able to tolerate them post op. Maybe the olive oil would be better on the old pouch than vegetable oil. Think I'll give it a try!
