Default Funeral Potatoes

I have been asked to post this recipe, just got it from my Mother.

She makes it from memory.. so bear with me on this one.

6 med to large potatoes cleaned and boiled until done.
1 can cream of chicken soup
1 can cream of mushroom soup
1pint of sour cream
1/4 cup of butter (melted)
1/2 cup of grated cheddar or sharp cheese
1/2 to 1 cup of crushed potatoe chips

boil the potatoes with the skin on until cooked all the way and let cool.
mix all the other incredients together and place in cassorole dish.
Peel potatoes when cooled, and dice or slice them up into bite size pieces
Bake @ 350 until it bubbles usually around 20-30 mins.

Can subsitute potatoe chips topping and make it with corn flakes and butter
not sure which is worse..

Not sure how many it serves.

my friend calls these cheese hash brown potatoes

We can have these?! They just seem so loaded with fatty stuff...and sound soooo delicious!

Um I'm not really sure if I would say we could have them. I think once in a while.. all things in moderation. I eat baked potatoes now with stuff on them, but can't eat that much.

I would never dream of eating this ~ too much of the wrong items... it sounds good though ~ in another life

Sorry to say, but, I wouldn't even eat this now and I haven't a surgery date in sight.

It's what my dad would label "Diabetic Delight".... in other words, don't eat it. He says that about the tuna noodle casserole I make for my hubby. lol
