Cottage Cheese Nut Loaf
Ingredients
1/4 cup unsalted margarine
1 medium onion, chopped
2 chicken bouillon cubes (or 2 teaspoons powdered)
dissolved in 1/4 cup hot water
2 eggs, well beaten
2 cups low fat cottage cheese
1/2 cup chopped walnuts
2 cups flake cereal - bran or corn
Instructions
Preheat oven to 350 degrees F. Saute onions in margarine. Beat eggs. Add bouillon, eggs and remaining ingredients, mix well. Bake 1 hour in oiled loaf pan or casserole dish.
Yield: 6 servings, 300 calories each.
Just one half cup serving of low-fat 2% cottage cheese has 16 grams protein.
