I found this great reciepe on the low carb - low cal show on the food network.
You wash your egg plant and yellow squash.
cut in half and place on a pan that you have put virgin olive oil on.
Dice red pepper, green pepper & red onion
Put a little olive oil on the top of the veggie and put salt, pepper, garlic if you want and then put a layer of the pepper & onion on the veggie's.
You can put a little bit of baco-bits on top of that and then
Put some grated parmasian cheese on top, not to much
Top with a little bit more pepper & onion just for the color and bake at 375 degrees until soft.
It is really good. I made it tonight and baked a chicken. yum yum
