Low Carb Pumpkin-Cream Cheese Pie
16 ounces cream cheese -- soft
1 1/2 cups artificial sweetener -- 36 packets
2 teaspoons Vanilla extract
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cloves
1 teaspoon ginger
1 teaspoon allspice
- or-4 tsp pumpkin pie spice
6 Eggs
29 ounces pumpkin, canned -- Libby's 100% pure
Preheat oven to 350 degrees F.
Make Pumpkin-Cheese Filling:
In large mixing bowl beat cheese until creamy. Add salt, spice and Equal.
Add eggs, one at a time, beating well after each addition.
Add pumpkin and vanilla.
Pour into 13" x9" GLASS baking dish.
Bake in 350 oven for 45 minutes or until knife comes out clean. Chill.
