Smile Looking for a good salsa recipe

I am just 2 weeks post op and am looking for a mild salsa recipe for when I move on to puree and soft foods. Any suggestions would be great!!

I have a very basic, simple one.

blanch 4 med size tomatos to remove skin
2 finely chopped jalepeno peppers
juice of 1 lime
2-3 tblsp fresh cilantro
1 clove garlic
small onion

Chunk all, toss in blender and blend. This seems to have gone over really well with my "stapler family". You can basically adjust everything to your taste. I am going thru a really "hot" phase now so I increase the peppers & clilantro. When I make a larger batch it tends to get "juicy" so I thicken it up with tomato paste. Oh yeah, I also add salt.

Pam's recipe sounds good! Here's another that may not be as hot:

6 Roma Tomatoes
1 Anehiem Pepper
2 Jalepeno Peppers
1/2 onion (I like yellow)
few cloves of garlic
Margarita Salt
Fresh Cilantro

Roast everything (except cilantro) in a frying pan on low heat.
Don't cook it just make every thing nice and warm. Keep turning, I don't mind if the skin browns a bit cause it gives a nice color for the salsa.

Either dice or chop all the garlic, onion and Anehiem pepper. Dice 4 of the tomatoes. Cut the last 2 in small pieces. (I like the larger pieces of tomato in mine).

Mix it all together. Finely dice 1/2 J. Pepper. mix it in and test hotness! (I have used anywhere from 1/2 to 5 peppers for a good mild-med salsa.)
Chop a handful of cilantro mix and add salt to taste.
You can use an electric chopper to make it fine or by hand for bigger pieces.

My favorite salsa that is store bought is Herdez in the grocery store, and comes in mild, medium, and hot. The mild is like tomatoe sauce but I assure you it's delicious. Suzy

A very good store bought mild salsa is Herdez mild. You can buy it at most supermarkets. Suzy
