Default Fried Rice substitute...and surprisingly GOOD!

1 cup prepared quinoa
1 4oz portion of meat cut up (salmon, chicken, pork)
1/2 cup soybeans (shelled edamame)
1 tbls soy sauce
1 tbls oil
one egg, scrambled
*optional - cut cooked mixed veggies? - i'm sticking to more protein though.

Okay...sometimes you just want this stuff, and we can't eat rice...so this is *MY* attempt at "healthifying" a bad dish.

Prepare some quinoa and put the left overs in the fridge overnight.

Next day, crumble up the salmon/whatever meat you choose, and get the soybeans ready. heat a non stick skillet or wok, and add the oil, heat till smoking. throw in the quinoa (min already had diced onions in it from preparing it the day before...if you like you could saute some onions now as well) and the meat and beans. STIR LIKE MAD!

Once it is all heated thru, drizzle the egg on and stir some more...the goal is to get them little eggy bits everywhere. finish with a drizzle of soy sauce and serve hot.

this is a fantastic way to use up leftover quinoa, and with considerably better macronutrients than "the other stuff"

I'm glad to see quinoa showing up here.

Nutritionally, it's a far better option to rice:

1/2 cup long grain white rice: 103 cals
1/2 cup cooked quinoa: 111 cals

rice carbs: 23g (.5g dietary fiber)
quinoa carbs: 20g (2.5g dietary fiber)

rice protein: 2g
quinoa protein: 4g

I love it served any which way.

I've never eaten quinoa, so bare with me if this sounds like a stupid question:

I've heard that rice absorbs water and expands in our pouches, and that's one reason we should not eat it much if at all. Does quinoa do the same thing?

quinoa very much less so than rice. Once Quinoa is cooked...that's about it. i've used it to some degree in a very moisuture rich environment and it just stays as them cute little balls the whole time. they don't seem to keep absorbing water until they turn to unrecognizeable paste.

Still, i limit my consumption, and make DANG sure I have other materials in with it to add to the paste my pouch receives after chewing.

I don't eat too much quinoa at a time - maybe 1/4 cup mixed with salad stuff (I like mine cold).

I've also started sprouting quinoa too (I love sprouted beans):
