Default Tofu Pancakes

Serves 1

Ingredients
1/2 cup old-fashioned oatmeal (uncooked)
1/4 cup tofu (or low-fat cottage cheese)
4 egg whites
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Instructions
Process the oatmeal, tofu (or cottage cheese), egg whites, vanilla extract, cinnamon, and nutmeg in a blender until smooth.

Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned.

You can top the pancake with a low-sugar syrup of your choice.

288 calories
4 total fat (1 g sat)
5 mg cholesterol
32 g carbohydrate
28 g protein
5 g fiber
451 mg sodium

Peck, that sounds so good! 28 g of protein!!! Woo Hoo! I've got all the ingredients and sugar free syrup!

It does sound good. I haven't tried it yet. If you get around to trying it could you please let us know if it's any good.

Of course I will! I'll try make it sometime this week. I'm really trying to get my kids more interested in healthy food and I think this would be an awesome staring point. Thanks so much! You are the recipe Queen!
