Default key lime yougurt bars

Key Lime Yogurt Bars
9 servings

Ingredients

8 whole graham crackers
1/4 cup SPLENDAŽ No Calorie Sweetener, Granular
1/8 teaspoon ground cinnamon
2 tablespoons margarine, melted
1 1/2 cup SPLENDAŽ No Calorie Sweetener, Granular
1/3 cup Key lime juice
2 cups Hy-Vee Light key lime Yogurt
2 scoops isopure
1 cup reduced-fat frozen whipped topping, thawed

1. SPRAY an 8- x 8- inch square pan with vegetable cooking spray. Set aside.
2. CRUSH graham crackers; reserving 2 tablespoons. Combine graham cracker crumbs, 1/4 cup SPLENDA Ž Granular, cinnamon, and margarine, mixing well. Firmly press mixture evenly in bottom of prepared pan; set aside.
3. COMBINE 1 1/2 cups SPLENDAŽ Granular and lime juice in a heavy saucepan. Bring mixture to a boil, reduce heat and cook about 5 minutes or until mixture is reduced by half. Set aside to cool.
4. STIR yogurt into SPLENDAŽ Granular and lime mixture; fold in whipped topping. Spoon mixture over graham cracker crust; sprinkle with reserved graham cracker crumbs. Cover and freeze at least 4 hours or until firm. Let stand at room temperature 10 minutes before cutting into bars

This was yummmmmmmmy. Some of the gals make it without the crust too.

That sounds good. How many carbs are you able to take out without the crust? I think I'd like it better that way.

I think you would just have to look at the graham cracker box and deduct whatever 8 would be. My box says 11carbs per cracker that would be 88 in the whole recipe divided by 9 would be about 10 per serving. So about 12 carbs per serving?! I think that is the only carbs in the crust. ??Cinnamon not sure. That would make it a lot better carb wise.

that would nearly eliminate the sugars in this recipe too. Also would cut the fat in half too. And the sodium would be way lower too. without the graham crackers this looks like a really good choice. Thanks for getting my math mind in action.

LOL.........you know the real reason was to be able to eat more of it! But actually, it would be pretty healthy then. It might give me a good dessert for that post-op pureed phase (that I am soooooo looking forward to).
