Default Adjusted the 5 DPT Pumpkin Sausage Soup

Ok so this soup sounded really good to me since it's getting cold here. But some of the ingredients were not so friendly to my pouch, too much fat between the sausage, the cream and the sour cream. So....I spent the day mucking with the recipe and here is what I came up with.

Pumpkin Sausage Soup


Thyme, Dried - 1 tsp, leaves (1.0 g)


Onions - 1 cup, finely chopped (160g)


Libby's Pumpkin - 1 cup(122)g


Land O Lakes Fat Free Half and Half - 1/2 Cup


Red Pepper Flakes - 1 tsp


Dried Sage - 2 Tsp.


Swanson Cooking Stock Chicken - 1 cup

Water - 1 1/2 cups


Jimmy Dean Reduced Fat Pork Sausage Jimmy Dean Reduced Fat Pork Sausage 4oz

Brown the sausage, add the onions, thyme, red pepper flakes and dried sage. Sautee until the onions are soft. Add the chicken stock, water and pumpkin puree. Heat through. Add the fat free half and half simmer for about 15 mins. You can add salt and black pepper to taste.

This is enough for about 6 servings so it's about 137 calories a serving and 8.5g of protein. Really good when I want something warm that will not destroy my daily fat and calorie count. My DH who thought it was just the most bizzare thing he had ever heard of loved it. He is in the kitchen stealing a bowl as I type lol.

We liked it too, despite the funky sound of it!

I also edited out the ingredients. In place of the cream, I used FF H & H and in place of the sour cream, I used--------- you guessed it! Fage 2%

Also, in place of the sausage I used some low fat fresh ground pork with sausage seasonings, and I rinsed the pork after browning.

I'm planning on making some soup this weekend... might make this one again My hubby also liked this soup- though he added some thick crusty bread & butter.. boo. lol

Sounds like a great recipe I will definitely try. Anything I can get down right now is good- I hate the beginning of cold weather-- Yes, I am a baby. I wish I still had my house in Florida, but, oh well, another lifetime ago. Thanks for the "tweaked" recipe suggestions.
