Default 13 Bean Soup

Here's what's for dinner tomorrow night.

Ingredients:

bag of 13 bean soup mix (as the name suggests, it has 13 kinds of beans in it!)
one onion, diced
one yellow bell pepper, diced
two or three teaspoons of minced garlic
some cumin (I dunno how much. I don't exactly measure it. Like, three or four shakes of the spice shaker thing it's in. Very precise, huh?)
garlic powder (a shake or two)
onion powder (a shake or two)

Directions:

Soak the beans over night, then rinse them.

In a big soup pot, saute the onion, yellow bell pepper, and garlic in a small amount of olive oil. Or use non-stick cooking spray. When it starts to soften, put the beans in the pot and cover with water. Add the spices. Bring to a boil, then reduce to a simmer. Cover and cook for a couple of hours.

If you eat meat, you could probably add a little ham if you wanted. But it's really good without it.

It takes a little while to cook, and you have to plan ahead and soak the beans the night before, but it's easy to make and only takes a couple minutes actual work to chop the onion and pepper. And it's a cheap meal, too. Well, it will probably make a couple meals, unless you're feeding a bunch of people.

Eh, I gotta say, this did not turn out as well as I had hoped. I think it needed more spices or something. It was kinda bland. I even threw some vegetable broth in it but it was still bland. Mike didn't even like it and he likes everything. The only other thing I've ever made that he didn't like was cous cous.

I like to do a cajun kinda taste with my bean soup. Add some Cayenne and Paprika powder and it will taste much better.
