Default Chicken breast with eggplant and tomatoes

I found this dish on russian website. I modified it a little to cut some calories. I made it tonight and it was to die for!

Ingredients:

chicken brast 2 filets
eggplant 2-3
tomatos 2-3
low fat cheese (shredded) 3-4 oz
fat free mayo (Miracle spread worked)
garlic 2-3 cloves
cilantro
cooking oil
salt
pepper

Slice eggplants lengthwise, salt slices light and leave them for 10 minutes or so.
Tenderize chicken.
Fry eggplant slices 1-2 minutes on each side. Lay slices on paper towel to get rid of excess oil and moisture.

I backing dish lay out fried slices of eggplant overlapping each other.
Then lay chicken on top of eggplant
Top chicken with another layer of overlapping eggplant slices.

Then lay out slices of tomato and sprinkle them some cilantro, diced garlic, salt an pepper. Spread mayo and sprinkle cheese on top.

Bake for about 30 minutes.

I made a variation of this today, omd's it is so yummy. This will be on my menu list post-op.

I left out frying of the aubergine, no mayo, did not salt the aubergine and left the moisture in the aubergine to as it helps to keep the chicken moist. Used fresh Basil, Oregano and Parsley instead of corriander. Added a little cheese sauce. YUM!

Sorry ladies, I don't have nut info for it. I wonder if anyone knows how to calculate cutritional content. If you do please, let me know

If you post-op you might skip frying eggplant to cut down on fat content.
Actually you can microwave eggplant for a minute or two just to make it soft.
