Default Spinach and Cheese Patty

I'm 4 wks post-op (still on pureed/soft foods) and this went down real well and it's delicious.

1 package frozen spinach, thawed
1 cup ff shredded mozzarella
1/4 cup parmesan cheese

Honestly, I don't measure the cheeses - I go by my tastebuds! So you can adjust the measurements to your liking.

1. Squeeze out all the water from the spinach and dry it out even further with paper towels.

2. Put all ingredients into food processor, processing it until the spinach is very fine.

3. From the mixture, make little patties (whatever size you like) and heat frying pan. If you don't have a non-stick pan use Pam.

4. Put the patty in the pan and "fry" it on both sides. You will see that the outside browns a little bit and gets crunchy and the cheese melts inside.

Use your judgment as to when you think they're done. I made 10 very small and very thin patties and froze them individually so next time I take one out and it's ready to fry.

SO GOOD !!!!!!! ENJOY !!!!!
