They are best with Vidalia's or Walla Walla - any other sweet onion - but regular whites or yellows would be fine, too. Simply add a sprinkle of Splenda to the pan as they saute and they will release their natural sweetness and be just as good.

ONION CUSTARDS

3 cups thinly sliced sweet onions (I used one LARGE Walla Walla)
1 tablespoon butter
2 eggs
1/2 cup milk
1/4 cup half & half (use all milk if you’d like to reduce the calories even more)
1/2 teaspoon salt
1/4 teaspoon black pepper
Dash freshly grated nutmeg
1 tablespoon fresh parsley
1 cup grated cheese – (whatever strikes your fancy)
2 tablespoons Parmesan

Preheat the oven to 350 degrees. Spray four 8-ounce ramekins (or a pie plate) with vegetable cooking spray and place on a baking sheet.

In a large skillet heat the butter and saute the onions, over medium heat, until just turning golden-brown. Meanwhile, whisk together the eggs, milk, half & half, salt, pepper, nutmeg, and parsley.

Divide the onions among the ramekins; sprinkle the grated cheese over the onions. Pour the egg mixture over the cheese – should just cover it. Bake for 15 minutes. Sprinkle the Parmesan cheese over and continue baking until done – about 12 minutes more. Serve warm. Makes 4 servings.

Per Serving: 220 Calories; 15 g Protein; 11 g Tot Fat; 13 g NET Carb; 8 g Sugar; 670 mg Sodium

Oh, that I wouldn't do. I have been traumatized the past few years by living with a female teen! My youngest, who is 9, gets fresh sometimes and I shut her right down and tell her IT IS JUST NOT HER TURN YET! Anyhow, what your kids would say to you is I am sure quite different from what they would say to me about you-they better know how good they have it!!

, probably very true. I have 3 daughters, thankfully only one is still left in those teen years. The other day she was screaming at me that she wanted to get a job JUST to get away from me because I was SO controlling. Let's see that was because I told her I wanted her to study for an upcoming test right away instead of taking a "break" after only 10 min of studying. She has ADDH and procrastination is her middle name. I must say though, she was mature enough to come back later and apologize after realizing she hurt my feelings with her comment. So I guess there is hope yet.

I made some Beef Bourguignon (a la Julia Child) last night and was so excited. I took a picture and everything. Then after I finished eating I took another picture. It is amazing that even after 9 months, my eyes are still a LOT bigger than my stomach. I ate about 3 pieces of the beef and two or three bites of salad. Yummy! I was totally satisfied and the recipe is really worth the time you put in making it. Lots of protein. I served my kids the same thing with buttered potatoes too and they even ASKED for some of the sauce over them. (8, 10 and 12 year olds!) Thanks for another good recipe milady.

M iladyB-Sounds like a day in my house old, with 4 children, the oldest of which is a 17 year old daughter. We are finally making a little progress, I think, in that she is realizing I am not the enemy. She was only just recently diagnosed as ADHD and having anxiety disorder so we are backtracking and scrambling big time to help her get on the right page. She is one of those "gifted and learning disabled" types and without knowing she was handicapped, her teachers and her parents wrote off the differences in her obvious ability and her performance as a lack of motivation. As your daughter, ours can do a good 10 mins. of work then be ready to take a break. The internet/Facebook/IM etc. is a total downfall. She gets so angry when I block them but she needs the temptation removed.

anyhow...don't know how I got off on that but thanks for being a compatriot in parenting. xo
