Carolina (not sweet!) barbecue sauce
After coming across a number of posts on how sweet-style barbecue sauces make so many people dump, i remembered how much I came to appreciate the Carolina (or Piedmont) style barbecue that is common in East North Carolina.
The first time I had it, I almost spit it out because I was expecting the usual, sweet gummy tomato sauce recipe. Carolina barbecue sauce is more vinegary, and I soon grew to prefer it.
Anyway, I thought I'd share one recipe -- there are others, including some with a little brown sugar, but Splenda lovers (blech) can substitute accordingly.
Here's the recipe I like; Google Carolina barbecue recipes if you want to see some of the variations. It's good on chicken and pork. I don't much care for beef barbecue, so I can't comment on that meat.
Carolina Barbecue Sauce:
2 cups apple cider vinegar
2 tablespoons crushed red pepper
1/2 tablespoon chopped fresh garlic
1/2 tablespoon kosher salt
1 tablespoon freshly ground black pepper
In a medium saucepan, combine the vinegar, red pepper, garlic, and salt over high heat. Bring to a boil and then reduce the heat to medium-high. Boil for 15 to 20 minutes and then remove from the heat. Let cool then add the black pepper.
Just pour it on your meat and let sit a bit.
