Default Shredded Chicken???

Okay, so I am quite possibly the most uneducated person when it comes to all things culinary. Anyways, I went to this restaurant the other day. It was a mexican place. I got this dish that had shredded chicken, beans, rice... etc. Didn't eat any of the rice or tortilla. BUT, I did have some of the shredded chicken and it was amazing. So, when I went to the grocery store, I looked for it. I was so mad when I couldn't find it. lol. Anyway, my question is... how in the world do they make shredded chicken? It was so soft and moist. Perfect.

I found this from a google search. I was gonna suggest the crockpot anyways, here is an easy recipe I've found. Cooking in the crockpot gets meats so moist that they just break apart. Enjoy!

Ingredients
2 lbs chicken breasts

1 (16 ounce) jar 505 medium hot salsa (or other brand if your store doesn't carry 505)
2 serrano peppers, chopped
6 garlic cloves, pressed
1 packet mccormick taco seasoning

Directions
1Combine all ingredients in crock pot and cook for 10 1/2 hours.
2To shred chicken, remove from crock pot and use 2 forks to pull apart.
3Very easy!
4Put shredded chicken back in sauce to keep moist.
5Serve burrito style or over rice.

If you are going to use the taco seasoning please be very careful as there is TONS of salt in there

I make mine with just chicken and Rotell. Still do it in the crock pot on low over night. The Rotell has peppers, onions, and tomatoes in it already. YUMMY

Gosh Ladies,

You are giving great recipe ideas, (wish I could eat chicken) My mind with its limited capacity,never read past the comment of how do you "shred chicken?" I was going to add some levity and say "chase it around with a lawn mower" but, I don't think that is what was being asked.

The shredding is done by hand with chicken that's been cooked in a crock pot or roasted/sauteed/microwaved, then boiled. Kajn, your recipe sounds great. My family would eat that, too.

In the grocery store, over by the tuna fish cans, there should be canned white meat chicken. I used lots of it - Aldi's even carries it! I like Tysons.

I eat shredded chicken ALL the time!! It's the only way I can get chicken down! I have baked chicken, used the crock pot, used breast strips and sauteed them - just any way you can cook the chicken is fine. Then I just take a fork and shred away! I usually shred it, then measure out 2 oz (or 3 or 4 or whatever you use or can eat) then put them in baggies and freeze them for later.

I would say cooking your own fresh chicken is the best way to go so you know what you have put on it as far as spices and salt, etc., but in a pinch, I have also purchased one of those rotisserie chickens at the grocery store and just took off the skin and used the meat part to shred.

I use the chicken in all kinds of dishes, but my favorite easy one is to throw fresh salsa (I make my own) and some reduced fat mexican cheese on it. The salsa usually has enough flavors that I don't even need additional spices on the chicken, but I have also used fajita mix now and again.
