Chicken Fajita whatever
I was craving taquitos but found the store ones to be too high in _____. So I decided to make my own healthier ones.
Big Flop.
Anyway, I had a couple ounces of Fajita chicken left so I started adding a bunch of salsa like ingredients with it and it turned out pretty good. It's not very original but I thought I would share:
2 oz chicken breast
fajita mix packet
¼ cup Mexican cheese (I used regular because it's what I had, but recommend reduced fat or fat free of course)
¼ cup chopped onion
¼ cup chopped cilantro
¼ cup chopped tomato
¼ cup chopped lettuce (romaine)
I cut the chicken up in small pieces and cooked them in the skillet. After they cooked, I shredded them up into smaller pieces.
Then I added the fajita mix to taste - maybe 2 tsp? I didn't measure, i just sprinkled it over the chicken, added some water and let simmer.
I chopped up the onions and cilantro and added that to the chicken and let it simmer in there as well. Meanwhile, I cut up the tomato and lettuce.
After the chicken mix was done, i put it in a bowl, sprinkled the cheese on it, then added the tomato and lettuce.
Next step: EAT.
Honestly, I didn't measure any of this stuff - just estimated only. I know I had 2 oz of chicken, but the rest was not officially measured, so you may want to adjust as you see fit.
Here is what I came up with for the nutrition value based on the above amounts plus full fat cheese:
Calories: 175, Fat: 5, Protein: 9, Net Carbs: 6.5, Fiber: .5
Please let me know if you have some suggestions or additions. I am thinking about chopping up garlic for next time. I have a great salsa recipe that I only need lime and jalapeno for along with the rest of the ingredients above, so you could always whip up a salsa and then add the chicken - almost the same idea. I would almost leave the cheese out, but it added 3 grams of protein. I will definately get some reduced fat for next time. I guess I could bump up the chicken to 3 ounces instead. Anyway, let me know if you make it and how you tweaked it!
