This isn't really a recipe per say, but something I ran across on the net (I just cut and pasted the comment). I'm not a big fan of tofu myself, but this actually sounds pretty good, and it would be loaded with protein.
I have enjoyed yogurt or even pudding-like treats made out of mori-nu silken tofu. For one brick (approx. 12 oz) of tofu, I add about 7 oz of milk (almond milk works great), a little flavoring (I've tried several, from coconut to pistachio... Lorann Flavorings offers a vast assortment), sugar or a safer substitute like stevia, and a little salt (maybe 1/8 tsp.). Blend it up and pour into dessert dishes... maybe add dry fruit for a little chew. I love it--it's a nice treat and a good source of protein.
