Default Chocolate crepes with orange mousse

CHOCOLATE CREPES WITH ORANGE MOUSSE

Crepes:
1/2 cup ricotta cheese
4 eggs
4 tablespoons flour
2 1/2 tablespoons Splenda
4 1/2 teaspoons unsweetened cocoa powder
4 tablespoons milk
Pinch salt
1/2 teaspoon vanilla

In a medium bowl whip together the ricotta and eggs until well blended. Whisk in flour, Splenda, and cocoa powder until smooth. Whisk in milk, salt, and vanilla. Allow to rest for 30 minutes.

Heat an 8-inch frying pan over medium-low heat. Spray with vegetable cooking spray and pour in 2 tablespoons batter, swirling to coat the bottom of the pan. Allow to cook until top is completely dry. There is no need to flip or turn these crepes...simply slide out of the pan onto a plate. Spray pan before each crepe. Makes approx 12 crepes.

Orange Mousse:
2 tablespoons reduced-fat cream cheese, softened
1 1/4 cups heavy whipping cream, divided
3 tablespoons Splenda
1 teaspoon instant pudding powder (cheesecake, vanilla, lemon)
1/4 teaspoon orange extract
1/2 teaspoon vanilla extract

In a large bowl beat the cream cheese, 1/4 cup whipping cream, Splenda, pudding powder, and extracts until smooth. In a separate bowl beat the remaining 1 cup whipping cream until stiff peaks form. Beat in 1/2 of the whipped cream into the cream cheese mixture until smooth. Fold in remaining whipped cream. Allow to chill for 1 hour.

Fill crepes with 2 tablespoons mousse and fold or roll up. Drizzle chocolate sauce on plate, add crepes and sprinkle with berries, if desired.

Makes 6 servings of 2 crepes each.

Oh My!! Oh My!!!! I had these today! I loved them, kids loved them!!! MMMMMMMM!!!! YUMMMMMM!!!
I did make one change, I used sugar free cool whip in place of the splenda and heavy whipping cream! Still very very yummy!!
