Spicy Thai Peanut Butter Chicken
One caveat, if you dump on fats, stay away from this or find a way to use the fake peanut butter powder. I'm not dumping on nearly anything anymore, so I am all systems go on this one. My kids LOVE "peanut butter chicken."
2 chicken breasts, cut into 1/2 inch or larger cubes/chunks
1 spanish onion cut into strips
1/2 cup peanut butter
1/2 cup water
3 tbls soy sauce (or reduced sodium soy)
3 cloves garlic, minced
1 tbls pepper flakes (maybe less for those who don't like spicy...I like "double extra spicy, so i use more as garnish at table)
stir fry veggies (peppers, mushroom, water chestnut, etc) to taste, or you can use fresh spinach (this is REALLY good and has some much needed calcium)
1 tbls oil for cooking chicken in wok
mix peanut butter, water, soy sauce, and pepper flakes in a bowl with a wisk until smooth and creamy - no lumps, and set aside.
Get the wok or skillet SMOKING hot, add the oil (always add oil to a hot pan) and toss the chicken till nearly done, add garlic and onions. Don't let the garlic burn, but keep stirring till the onions are starting to soften (you still want a little crunch.
When chicken is done (cooked thru, and slightly browned) and the onions are on the better side of being done, pour in the sauce. Warm till heated thru and remove from heat.
This is where I would add the spinach and let the residual heat wilt the spinach. Otherwise, I'm cleaning the wok with a quick scrub and some hot water (NEVER USE SOAP IN YOUR WOK!!!) and then give the veggies a quick low oil stir fry. Mix with meat mixture and make sure it's all heated thru and well combined.
I serve this with a little portion of pad thai noodles (most supermarkets have them, they are wide fettuccine noodles made from rice) for the wife and kids. I sometimes sneak a little bit of noodles too, but i'd rather have mushrooms and squash or eggplant with this. The kids are not fond of eggplant but eat nearly everything else.
Without the noodles and veggies, this has the following in 1/6th of the recipe (about a half cup to 2/3 cup)
Cals - 277
Fat - 15g
carbs - 9g
Prot - 26g
It's dang yummy, and very flexible. It is super easy to make, enjoy, we do!

Mmmmm....I love peanut butter! I get something similiar to this when we go out for thai food, and it is super good. I will have to try this!
I find that I dump on some fats (cheese that's not reduced fat, salami, hot dogs, etc.), but never on nuts. Peanut butter, cashews, almonds, etc. have all gone down really well.

Yeah Ash, this one is really easy on my tummy. My 16 month old loves it too, and I adore the sweat and tears from my 5 year old as he chokes down the pepper flakes LOL...he's such a trooper. Wants to be just like dad
We had this for dinner last nite, and I just KNOW nick is sitting on the john this morning yelling "COME ON ICE CREAM, COME ON ICE CREAM!" as he anxiously awaits the midget in the toilet to finish welding his sphincter shut...

Trying this one tonight...I don't have chili flakes, but have some chili sauce from chinese takeout...hoping that will be okay...we all love peanut butter...yummy...will let ya know...

It was super delish! The fam got rice...I just had it with the veggies...filling and satisfying...hubby thought it was as good as he's had at restaurants! HOME RUN!
I agree, noodles with it would be yummy.

glad you liked it!
The rice noodles (pad thai) work okay for me, i can tolerate some carbs, and this was a much better alternative to rice. My dr. said NO RICE UNDER ANY CIRCUMSTANCES. Rice is one of my trigger foods - used to eat a ton of it all the time. It was nice to get the TASTE of rice wihtout the bulk :shrug:

Yah, for me rice is the devil...I just gave it to the fam because I had some left over from something a few days earlier...I'll look for the pad thai...thanks again for sharing the recipe...
