Default French Onion Soup

Hi

Ive found that my french onion soup has helped with my cravings post op - as im less than a week out. I havent fealt any negative benefits as yet.

1 Onion
1 Beef stock cube
1/2 pinch sugar
1 pinch Herbs to taste (Parsley, Oregano, Tarragon, Basil)
1 tea spoon garlic

-----------------------------
1.a. Slice the onion and fry in either Fry lite or another form of spray oil. If you are able to tolerate a small amount of sunflower oil, use that.

b. Add a very small pinch of sugar to the onions, this allows them to be caramelised durign the cooking process

c. The key to knowing when these are cooked is that they will be smooth and brown, and very limp to the touch. I cook them until I believe they have been 'just overcooked'


2.a. while your onions are lightly frying put some hot water onto boil and put your beef stock cube into the hot water
b. now add garlic and herbs
c. boil the onions with this mix on a low light for 20-30 minutes
d. Blend the mix, and seive the bits out (obviously no need if not on liquid diet)

I find this very soothing as it has a deep, but not strong flavour. If you find any of the ingredients not agreeing with you, then change as desired.

I had surgery June 30th and haven't craved anything hot all week, I went out this morning and got the things I needed for this soup, I made it up, strained ou the onions and I must say that I am in heaven. It def. hit the spot. Thanks for sharing!
