Default Tuna Recipe I got emailed to me this morning.

Tuscan Tuna and White Bean Salad





6 servings

If you want to cut this recipe in half, use a half can of beans and one small can of tuna. Juicy fresh tomatoes replace some of the usual olive oil in this traditional pairing of tuna and white beans.

Ingredients:
3 tablespoons olive oil, preferably extra-virgin
3 tablespoons fresh lemon juice
2 cloves garlic, finely chopped
2 teaspoons dried rosemary, crushed
1 15-ounce can white beans (cannellini or Great Northern), drained and rinsed
2 plum tomatoes, chopped
1/3 cup chopped parsley, preferably Italian flat-leaf
1 12-ounce can (or two 6-ounce cans) solid white tuna in water,
drained and flaked



Instructions:
Whisk together olive oil, lemon juice, garlic and rosemary in a bowl.

Add beans, tomatoes and parsley and toss together. Gently stir in tuna.

Nutritional Information: Per serving:
235 calories
9 g total fat (1 g sat)
24 mg cholesterol
18 g carbohydrate
21 g protein
5 g fiber
233 mg sodium

I love the fact that it has 21 grams of protein in a serving. If you like tofu it would be great thing to add or even some cheese to add some texture and flavor.

Ok I made this recipe yesterday. I made some changes cuz I didn't have everthing.

So I looked at the protein levels on Northern white beans Vs Garbanzo and 1/2 cup white beans have 3grm and 1/2 cup garbanzo have 6. I love garbanzo beans so I put those in.

I didn't remeber having tomatoes, so I put in cucumber a whole small one. I was wonderfully fresh from my friends garden. Then I remembered that I had some tomtoes on the vine (not a alot) but enough, so I through those in.

I didn't have any parsley so I didn't add anything. I did put some salt and more garlic and lemon juice than it called for. And I course had to add my favorite spice Chili powder.

I tasted it and it was fabulous. I did have it with some small rice crackers. I loved it and so did my rotweiler. but he loves everything. lol

I will try and find some more tuna recipes. Cuz I love to make cold tuna thing. I am not too keen on things like tuna caserole. Grosssssss...... I have million cook books and love to cook so I will start posting some stuff.

Please post your faviorit receipes share the wealth.
