Strawberry Short Fake
Strawberries are in season!!!
I used to make this with sugar and corn starch for some thickener, then added white/yellow cake cups, but here's something I made a few days ago.
I cut up a container of strawberries and placed it into a pot. I added 1/2 packet of stevia, tasted it and added the rest of the packet (Splenda should work well, too).
I covered and cooked it until there was some juice and the strawberries were mostly soft, 3-5 minutes. Then I put it in a container and popped it in the fridge. I like it on the slightly warm side, but it's great cold.
Spoon a few tablespoons onto a small serving plate. Top it off with a spritz of fat-free whipped cream and voila': dessert!
1-cup of sliced Strawberries is 53 calories. With some whipped cream, should be no more than 100 calories total.
Honestly, you don't miss the cake part. But, if I could find a white/yellow cake recipe that would fit the low-cal, low-carb part, I'd try it.

What about a slice of sugar free angelfood cake? (none for me though, the sugar alcohols killed me in it)

Yes, I just wrote the recipe on another thread and thought, why not put it in here?
SF angel food, why not? it adds to the calorie count though. You have to do the math for your own day, but as a whole, it would be a great dessert - and WOW, great to bring to a WLS post-op affair.
My support group has a picnic every year, if I can find lots of strawberries on sale, since they're in season, maybe I'll make this. It's in August. I can freeze the strawberries.
Do you know where can I find SF angelfood cake? I figure I can cube it up and it can be a make-you-own kind of dessert.

I got my sf angelfood cake at Walmart here. It tasted just like the real thing too. Sam's here has some really good strawberries right now. The best of I have found to buy, unless you wanna pickem yourself.

Marella if you can find a yellow cake that is low fat and sugar instead of putting in the egg, oil and water add one can of diet coke that's it....It won't change the stats of whatever kind of cake mix you use and it's yummy....

That is the most outrageous substitution I've ever heard... I'm going to have to try that just to see. Thanks.
Do you suppose there's a low everything cake mix at GNC or a health food store?

I used to make that when I was on Weight Watchers, and it's actually really good. If you use a white or yellow cake mix, use diet sprite instead of diet coke. If you google for Diet Coke Cake, you'll find the recipe and the baking directions.
I love strawberries! I've been eating them nearly everyday with my Greek yogurt.

I will, thanks. Now, I'm looking forward to the picnic. I was out of town for last years picnic, and I have no idea how it went. At a recent support meeting all the pre-oppers were cautioned to bring foods that post-oppers can eat.
I am very wary of other peoples foods. I moved to an area where they put sugar in spaghetti, so I'm never sure about what people serve in their homes and what they'd bring to pot luck. I'm used to making stuffed shells for pot luck, where non WLS'ers gather, but this is not an option to feed post-oppers.
I hadn't a clue as what to bring in volume AND NOW I KNOW! I figure $25 bucks and I'll have loads to fill all the bellies. We're expecting at least 80 people.
Diet Coke/Sprite cake cubes, strawberry compote and loads of fat free whipped cream -- thanks all!
