Saw this posted elsewhere...looks tasty, so I'm sharing it with you all.

LOW - CAL STRAWBERRY DESSERT

1 lg. pkg. sugar-free strawberry Jello (8 serving size)
16 oz. container fat free cottage cheese
8 oz. sugar free Cool Whip
2 c. sliced strawberries

Combine dry Jello mix and cottage cheese. Mix well. Fold in whipped topping and strawberries. Chill.

Update...I made this last night. It is very good, and super easy to make. I doubled the recipe, so there would be some left for me after the hubby and son got into it.

Anyway...here are the nutritional stats. I used 4% cottage cheese (the fatty kind), and Cool Whip Free. (Surprisingly, Cool Whip free has better nutritional stats than Sugar Free Cool Whip...go figure.) To lighten this up, you could always use fat free cottage cheese. Oh, and I only used 1/2 of the Jello that it called for...it would have been too sweet otherwise.

Honestly, I feel rather guilty eating all of the Cool Whip, but the protein count in this is great...especially for a dessert.
