For You Curry Lovers
I ADORE curry and this is a easy, tasty recipe.
I generally make a big batch (minus the yogurt) and freeze it in Ziploc containers.
Curry Sauce - makes about 2 cups

1tbs olive oil
1 medium onion finely chopped
1 clove of garlic finely chopped (I use 2-3)
2tsp curry powder (I use 3)
1/2tsp ground ginger (I use 1tsp fresh grated)
1tbs all purpose flour
1 1/2 cups chicken or beef broth (I use Swanson Lower Sodium Beef Broth ff)
1 cup ff plain yogurt at room temperature
Saute onions until clear, add garlic - cook for 2-3 mins.
Add curry powder, ginger and flour and cook, stirring for 2 mins.
Add broth, stirring constantly.
Season with salt and pepper, cover and simmer for 15-20 mins.
Add yogurt, sir well and heat through.
These are the stats for the whole batch. It should feed 3 or 4 so divide the numbers accordingly:

20g sugars (comes from yogurt and onion)
4g fiber
I like mine with small shrimp on a bed of julienne zucchini - Peter likes his with chicken over rice.
