Default Chic pea salad

I have been having this as a side with my dinner or lunch. It is a great soft veggie and it has protein. ( I make this a day or two in advance put it in an air tight container and every time I go to the fridge for a drink I flip the container so it gets all the flavor mixed through!)

1 can of chic peas drained and rinsed
1/2 small onion diced
2 cloves garlic diced
pinch of salt
oregano 1/2-1 tbs depending on your taste
2tbs red wine vinegar
1 tsp olive oil

Marinate for 1 to 2 days. I like to serve this at room temp. (also I have been picking out the onions and garlic I have not had any raw veggies yet and not sure how I will handle them ) but the flavor is still there!

That sounds great! i'm soo bad about getting in the protein so this sounds like a great alternative for me. Thanks for the recipe! I had a great salad yesterday at a Longhorn restaurant its a Tomato and onion salad with balsamic vinagrette. It's was just a very simple salad with tomato slices, red onion slices, balsamic vingrette, and blue cheese crumbles. I'm sure it isn't the best for protein but there should be some with the blue cheese.

That sounds really good! I make something similar well it is more of a platter type of a salad but you can make it portion size. I slice tomato's, fresh motzorella, fresh basil. I layer it in a circle on a platter then I mix red wine viniger with olive oil and a little red pepper and drizzle that over the whole thing!
