I have been having this as a side with my dinner or lunch. It is a great soft veggie and it has protein. ( I make this a day or two in advance put it in an air tight container and every time I go to the fridge for a drink I flip the container so it gets all the flavor mixed through!)
1 can of chic peas drained and rinsed
1/2 small onion diced
2 cloves garlic diced
pinch of salt
oregano 1/2-1 tbs depending on your taste
2tbs red wine vinegar
1 tsp olive oil
Marinate for 1 to 2 days. I like to serve this at room temp. (also I have been picking out the onions and garlic

I have not had any raw veggies yet and not sure how I will handle them ) but the flavor is still there!
