Default Turkey & Black Beans

1/2 pound ground turkey
1 medium onion, chopped
1 clove garlic, minced
14 oz can petite diced tomatoes
2 tsp chili powder
1 tsp cumin
1/4 tsp oregano
1/4 tsp black pepper
14 oz can black beans, drained and rinsed


In a large frying pan brown ground turkey & onion. Add remaining ingredients, stir and simmer (uncovered) for about 10 - 15 minutes until thickened. Serve with shredded cheese, low-fat sour cream, and olives. Your family can enjoy the mixture in a tortilla, if desired.

Makes 6 servings.

Fat: 1g
Protein: 17g
Carbs: 13g
Sodium: 365mg
Fiber: 4g

Got this recipe at a WLS cooking class I went to. Made pre-op and LOVED it. Can't wait to eat this again. Yum yum.

Got to tell you - I made this one for my DH and he loved it!

He had heart surgery just over 3 weeks ago and his diet is somewhat restrictive (low fat, low sodium).

I had to add a few squits of TABASCO Chipotle Pepper Sauce to raise the heat level but this is definately a keeper. Thank you!
