Default Veggie & Cheese Casserole

1 box frozen chopped up veggies (Broccoli works well), thawed
2 cups of low fat cottage cheese
3/4 cup low fat shredded cheddar cheese
1 yellow onion, diced
1 cup egg substitute
3 tablespoons parmesan cheese, grated (I used reduced fat)

Heat oven to 375. Coat 9 inch pie plate or 7x9 inch pan with cooking spray. Mix all ingredients in a large bowl. Pour into dish. Bake 35 - 45 minutes until the center is set. Allow casserole to cool for 10 minutes.

Makes 6 servings.

Cal:149
Fat: 5 g
Protein: 18 g
Carb: 8 g
Sodium: 230 g
Fiber: 2 g



Found this in 'Recipes for life after weight loss surgery'. I highly recommend that book. Made this stuff pre-op. This stuff is wonderful. Good for breakfast. yum yum yum.

Just be careful about eating broccoli after surgery. It doesn't digest well. That is the ONLY thing I've ever thrown up. I haven't really touched it since.

That sounds yummy! My family makes a swiss medly recipe that's similar - except with every type of fat imaginable.
