Default Grilled shrimp

This was so easy and the shrimp are delicious! Adding the lemon made it so I didn't want any cocktail sauce!

Grilled shrimp
Cook time 5 mintues
Serves 4

Ingredients

* 16 jumbo shrimp, deveined in shell, raw
* Extra-virgin olive oil, about 1/2 cup for brushing
* Coarse salt and black pepper
* 2 lemons, halved

Directions

Preheat griddle or grill pan over high heat.

Butterfly shrimp by slicing almost through lengthwise, but leave shell on shrimp, this will keep the shrimp tender while grilling over such high heat.

Brush shrimps with oil, season with salt and pepper and grill 2 minutes on each side, until shells are hot pink and shrimp is opaque.

Place lemons on grill the last minute. The heat will release the juice from the lemons. To serve, squeeze grilled lemon wedges over shrimp.

I'll have to try this. I adore shrimp ... well any seafood really.

I tried to mash one up when I could start my soft food and it was a no go ... but I had a stricture forming I didn't know about at the time.

So now I feel safe in trying it again

hmm... shrimp.. loved grilled shrimp.. esp. outback. But last couple times i had it i got sick.. but they were both lightly fried.. so that could be why.. but i may try it. I also found rumoulade (sp) sauce like outback in the grocery store.. goes so well with so many things! not bad for ya either.

I use my George Forman grill for shrimp.....and then Mrs. Dash's (saltfree).

shrimp is one of the few things that I can eat easily...besides yogurt and soups.

I just bought 5 pounds of shrimp the other day. Our local fresh fish market put them on sale. I think that is what we are going to have for dinner one night this week. The last time I ate a piece, they were so good and my new pouch loved it too.

This is very close to how I cook shrimp on the griddle. Mmmmmm

My only problem with shrimp is that I have to wait to swallow until after I chew (old habits...). Shrimp is still one of the foods that I REALLY have to pace myself on.
