Lemon Cheesecake Mousse
Everyone in my family likes this easy recipe. It tastes too rich to be good for you!
Lemon Cheesecake Mousse
1 pkg. Fat Free Cream Cheese, softened
1 On the Go tube Crystal Light Lemonade Flavor Drink Mix
1/4 cup cold skim milk
1 tub Cool Whip Sugar Free whipped topping, thawed
Beat cream cheese and Crystal Light in a large bowl with mixer until well blended. Gradually, add milk, mixing until well blended. Stir in Cool Whip.
Spoon into 8 seperate desert cups and refrigerate 4 hours or until firm.
Nutritional breakdown:
96 calories
3 g fat
0 cholesterol
208 mg sodium
13 g carbs
2 g sugar
4.3 g protein

I wonder if adding some unflavored protein powder would bump up the protein w/o altering flavor much?
I really miss lemon pie.. I might give this one a shot! I would change the SF cool whip to the FF variety since it's lower fat and not a whole heck of a lot of difference on the sugar part, though.

I seriously thought about adding protein powder to the mix, but I have the most horrid tasting "unflavored" protein powder in existance, I think. Next time, I might try it with a scoop of Nectar Roadside Lemonade and see how it turns out..

I made this yesterday for a family gathering. I wanted to make something good that I would actually be able to eat along with everyone else. It turned out very nice and is so easy to make. I made a double-batch because I wanted to make sure I had plenty for everyone, and now I have some left over.
Since I was making it for a group, and not just for myself, I didn't add protein powder, but I think a scoop could be added without changing the taste.

Is it a tube of the on the go pack or a big one that you make for a pitcher? This would be great for a nice sweet treat.

I thought it meant the on-the-go size, which is what I used. Don't know if I was right or not, but it seemed to have enough flavor.

This sounds really good. I like a TON of flavor so I'm going to try it with the 2 quart size lemonade.

It is the single on-the-go tube.. just as a warning, a whole tub would make it very flavored. I was surprised to discover how much flavoring just one little tube gave it.
