Thumbs up Italian Tofu yumsagne (7 wks out)

Hey all, I am 7 wks out and this has been a keeper ( just tried it this wk)....

Add garlic oil(1 tbsp) to frying pan, a handful of minced chives(mine were fresh from the garden) and 1tsp butter in frying pan. Chop up 1 brick of firm tofu into 1/4 inch chunks and add to pan, cook for 10 min.

In 8 by 8 glassware lightly coat w/ non stick spray. Mix 1c FF ricotta w/ 1c. spegetti sauce(four cheese from...some name brand was lowest fat and sugar) and coat bottom of pan, add tofu in even layer, add another spred of ricotta/sauce mixture.

Cover w/ foil and make small slits in top, cook at 325 for 25min.

Tastes great and is soft and just a little more consistency than pureed.

This sounds good, and I have all the ingredients except for the chives. Think I will give it a shot tomorrow! Thanks for posting it.
