Default crockpot taco soup

Sounds really good! THE CARB COUNT IS REALLY HIGH ON THIS ONE...I don't know if they are including the chips. ANYONE GOT ANY SUGGESTIONS?? Got the nutrition facts off of TheDailyPlate.com, don't know if these are the exact nutrtition stats. But I've look it up other places and the protein and fat and calories look about the same.

Ingredients:
1 pound lean ground beef
1 can (15 ounces) kidney beans
1 can (11 to 15 ounces) whole kernel corn, drained
1 10 oz can Rotel tomatoes
1 envelope taco seasoning
1 (28 oz) can tomatoes
1 sm can chopped chile peppers (4 ounces)
1 can (15 ounces) pinto beans
1 envelope Hidden Valley Ranch Dressing

Preparation:

Brown the ground beef; drain well. Add remaining ingredients and stir. simmer in slow cooker on LOW for 6 to 8 hours. serve with tortilla chips or Mexican cornbread.

Beans have tons of carbs in them. Healthy carbs, but still carbs that count in. Corn has carbs too, not as healthy of a choice.Plus that is for a regular serving. I still cant eat 1/2 a serving of soup. So with that said. I still havent eaten kerneled corn. I remember how i never chewed it before, so i wouldnt add corn to soup if you are near early post op.

Corn is really high in carbs. Best to sub another veggie in there.

My MIL suggested it, but this isn't the recipe she used. She said she used a Weight Watchers recipe, sounded a lot like this one though. She said it was a stapel for her for awhile. I could definitely sub other veggies in there. I'm gonna do some digging on the recipes and nut stats, there has to be a better one out there with less carbs. You could also use chicken.

the corn aka Hominy is the key. Sorry to say. I loved that soup. Especially use the low sodium taco seasoning.

The carbs are from the beans, tomatoes, and corn. IMO, you shouldn't be overly concerned about the carbs in the beans and tomatoes. (Be sure to buy tomatoes with no added sugar though.)

I've made this soup many times (it's an old Weight Watchers recipe), and it tastes pretty good even without the corn. It's pretty high in sodium though, so you might retain some fluids.

BTW, this soup freezes really good. When I make it, I freeze a bunch of small containers to take for lunch.

Oh good, well I always buy no sodium seasonings for hubby blood pressure. Glad to hear its good and freezes well. I love my crockpot, especially since surgery. I have a hard time with meats and the crockpot really helps cook it down. Yeah! No corn no prob, can't wait to try it!
