IT WAS AWESOME! I made it exactly as the recipe describes above.
I cooked it one day, left it in the crockpot and left it on warm the next, so the flavors really had a chance to mix...HUBBY loved it...SON loved it..and I loved it...a total winner...we even had some to freeze. THANKS

Karen, that soup was DA BOMB! I'm always dickin' around with recipes, and some of the ideas I have are....include the juice of the beans to help with the broth, the hominy instead of regular corn is a totally excellent idea (great flavor, too!) and then instead of corn, I've discovered that slicing cabbage into soups tastes really good, and cooks down well, but still retains the fiber.

The fiber in the beans and corn are also a good thing to consider. There's more to it than just avoiding carbs. Refried beans are a staple food, and they're high in carbs, too, but they also provide protein, good good vitamins, and fiber. Bread, rolls, poptarts--those are the carbs we need to avoid!

Karen, I'm SO going to make this soup, my mouth is watering thinking about how good that soup was. Did you two go to Hawaii yet? We need to get together again soon--give us a call so we can set something up, eh?

Hmmm, I'll try to get all the answers in here! First, we do leave the juice from the beans, it definitely helps!

We have not gone to Hawaii yet, we leave May 15 and come home the 18th. I have a sweatshirt that matches Michelle's jacket to give her.

We were just looking at a calendar to try to figure out when we could get together with y'all... I'll give you a call later in the week

No worries on the play date, Sweetie--we know you are very busy peeps with teenagers and it's Prom Season. Nuff said.

Michelle and I were poking around in the extra household we have here now, and she found a little something she is eager to gift to you.

With the extra household (ARRRRRGH,,,,,,), I haven't been able to take the 'purple force' out to the short course to see if I can do this, but I had a great time just hangin with you around a bottle of wine just as much--no need to do the Ritz, if you kwim. Well I tried it and it's really good. I handled it very well considering ground meat is a hit or miss for me. The crockpot always helps me with the texture of meat. This recipe is definitely a keeper. Thanks to everyone for their input. Enjoy!!
